We’ve got something delicious (and nutritious) that we think you’re going to really enjoy…

…It’s got everything from peanut butter to chocolate to heart-healthy oatmeal.

But the best part?

They’re so unbelievably delicious you may need to make two batches so you have enough to last at least a day and a half… 

Here's what you'll need:

  • 2 scoops Veg-Pro Snickerdoodle
  • Flax eggs - (1.5 tbsp ground flax seeds + 4.5 tbsp water - chia seeds work too!)
  • 1/4 cup olive oil
  • 3 mashed ripe bananas
  • 1 cup unsweetened applesauce
  • A pinch of salt
  • 1 1/2 tsp of baking soda
  • 1/2 tsp of ground cinnamon
  • 1/2 cup of unsweetened almond milk
  • 1 heaping cup of grated carrots
  • 1 cup of oats
  • 3/4 cup of almond meal
  • Chocolate chips and almond butter for topping (optional but highly recommended!)
  • Large mixing bowl
  • Muffin tins

Here's how to do it

Step 1: Preheat oven to 375 degrees F (190 C) and line a muffin tin with liners.

Step 2: Prepare flax eggs in a large mixing bowl by mixing the flax seeds and water.

Step 3: Mix flax eggs, mashed bananas, agave, olive oil until combined.

Step 4: Add applesauce, baking soda, salt, cinnamon, and whisk until combined.

Step 5: Add almond milk and stir.

Step 6: Add grated carrot and stir.

Step 7: Add oats, almond meal, and stir.

Step 8: Divide into the muffin tins, filling them all the way up to the top. Add some chocolate chips on top if you want.

Step 9: Bake for 32-35 minutes, or until a toothpick inserted into the center comes out clean.

Step 10: Remove from oven and let set in the pan to cool for 15 minutes. Then remove and let cool completely.
