This festive 4th of July Veg-Pro Vanilla Muffin recipe is the solution!
These tasty treats are not only easy to make, but they make so much they are perfect for all those 4th of July parties too!
2 scoops Veg-Pro Vanilla
2 flax eggs (Just take 2 tbsp ground flaxseed and mix it with 5 tbsp water)
1 cup unsweetened apple sauce
2 ripe medium bananas
2 cups oats
1/4 cup maple syrup
1 tsp vanilla extract
1 1/2 tsp baking powder
1/2 tsp baking soda
Topping ideas: mini chocolate chips, raisins, whole oats, sprinkles, toasted coconuts
Step 1: Preheat oven to 400 degrees F and line a muffin pan with paper tins.
Step 2: Prepare flax eggs by mixing together the ground flax seeds and water. Set aside for about 10 minutes to thicken.
Step 3: Add all the ingredients besides the toppings into a blender or food processor and blend until smooth. Scrape down sides as needed.
Step 4: Fill each muffin tin to about 3/4 and add toppings.
Step 5: Bake for 16-18 minutes. Insert a toothpick in the middle to check. They are ready if it comes out relatively clean.
Step 6: Let muffins cool in the pan for a few minutes before transferring to a cooling rack, then cool for another 10 minutes.
Show up to a party with these delicious treats and then all you have to do is sit back and wait for the compliments to roll in!
