It's been said that breakfast is the most important meal of the day...

So why not make it exciting?

Because if you could look forward to this on your plate every morning, chances are you'd set your alarm a little earlier and NEVER hit the snooze button!

Here's what you'll need:

  • 2 scoops Veg-Pro Peanut Butter
  • 1/2 cup whole wheat flour
  • 1/2 tbsp baking powder
  • 2 tbsp peanut butter
  • 1 tbsp coconut sugar
  • 1 cup unsweetened almond milk
  • 1/2 tsp apple cider vinegar
  • 1 banana
  • A pinch of salt
  • A pinch of ground cinnamon
  • A pinch of nutmeg
  • Optional topping: melted peanut butter! 
  • 2 large bowls
  • A waffle iron

Here's what to do:

Step 1: In a large bowl, whisk together flour, baking powder, Veg-Pro peanut butter, and salt and preheat the waffle iron.

Step 2: In a separate bowl, whisk together peanut butter, coconut sugar, almond milk, and vinegar in a separate bowl. Mash bananas into the mixture until evenly combined.

Step 3: Combine bowls and mix well to an even consistency.

Step 4: Lightly coat waffle iron with cooking spray. Pour about 1/4 cup of batter onto iron and cook until both sides are crisp.

Step 5: Repeat with the rest of the batter.

Step 6: Add melted peanut butter topping

Step 7: Enjoy!

This is one of those guilty pleasures you don't have to feel all that guilty about eating. It's a versatile recipe so if you don't have coconut sugar or want to use another type of flour you can do that too!
