The smell of fresh cookies baking always makes the house feel warm and welcome...

And while most cookie recipes are full of copious amounts of sugar, this one relies on delicious Veg-Pro peanut butter protein to supply all the sweetness and flavor you could ever want!

Here's what you'll need:

  • 1 scoops Veg-Pro Peanut Butter
  • 2½ cups of whole wheat, almond, or garbanzo bean flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • A pinch of salt
  • 1 cup butter, softened
  • 1 cup of light brown or coconut sugar
  • 2 tsp vanilla extract
  • 2 eggs
  • 1¼ cups caramel bits
  • 1 large bowl
  • An oven
  • A baking sheet

Here's what to do:
Step 1:
Preheat the oven to 375 F and line baking sheets with parchment paper.

Step 2: In a bowl, add flour, protein, baking soda, baking powder, and salt and stir well.

Step 3: In another bowl, add butter, white sugar, and brown sugar and beat until light and fluffy.

Step 4: Add the vanilla extract, and eggs and beat until well combined.

Step 5: Gradually add in the flour mixture and mix until just combined.

Step 6: Fold in caramel bits.

Step 7: Scoop 2 tablespoons of cookie dough onto prepared sheet 2 inches apart.

Step 8: Bake for 8-9 minutes then let cookies cool on the baking sheet for two minutes then place onto a cooling rack.

Step 9: Eat right away or store in an airtight container for a few days.

 

Cookies don't have to be unhealthy to be delicious...you just gotta use better ingredients!

Pro Tip: Don't like or allergic to peanuts? No sweat! You can use any other flavor protein you'd like!
